Avocado Stuffed Tomato Baskets
Tidbits...this colorful dish is very appealing as a light lunch or antipasto. These tomato baskets could also be filled with guacamole.
- Wash tomatoes and form a basket eliminating the interior seeds and pulp.Lightly salt the insides and put them on paper toweling.
- Cut the avocados and remove pits and skin. Mash roughly with fork, or blend in blender. Combine avocados, mascarpone, scallions, chopped garlic, tabasco sauce and lime juice.
- Mix until well blended. Salt and pepper to taste and stuff baskets with mixture.
